An alternative sugar-free version of a spring time favourite of mine, Elderflower Cordial.
10 Elderflower heads
6 Prunes (or dates)
1/2 lemon sliced
Place all ingredients into Large jar, cover and leave for 2 – 3 days to ferment.
Bubbles will begin to rise from the bottom at which point you are left with a sparkling cordial.
Store in the fridge for one month. It couldn’t be easier!
