Tika Masala Tofu
INGREDIENTS
serves 2
4oz firm or extra firm tofu (sprouted or regular)
1 tsp turmeric, divided
2 tbsp garam masala, divided
1/4 tsp red chilli powder
2 tbsp ghee
1 tbsp ginger, minced
1 Bulb fennel
salt, per taste
1 cup coconut milk
1 Lemon
1 Cup Fresh Coriander
1 Cup Basmati Rice
INSTRUCTIONS
Cut Tofu into small cubes and finely slice fennel bulb
Place ghee, tofu, fennel and spices into a pan and gentle heat until soft
Grate the zest of one lemon and place in a separate pan with the rice, and 3x water. Bring to the boil and cook for 10 minutes.
Add coconut milk and lemon juice to the tofu and fennel.
And fresh coriander
Serve Tofu Tika masala with lemon Basmati rice, and Green salad and dressing as below…

BLUEBERRY VINAIGRETTE
8 tbsp Balsamic Vinegar
4 tbsp Honey
2 tbsp Lemon juice
1 Cup Olive oil
1 Cup Blueberries
Smash blueberries in a ziplock bag, whisk other ingredients together, then add blueberries and blend
