Tika Masala Tofu

INGREDIENTS
serves 2
4oz firm or extra firm tofu (sprouted or regular)
1 tsp turmeric, divided
2 tbsp garam masala, divided
1/4 tsp red chilli powder 
2 tbsp ghee
1 tbsp ginger, minced
1 Bulb fennel
salt, per taste
1 cup coconut milk
1 Lemon
1 Cup Fresh Coriander
1 Cup Basmati Rice

INSTRUCTIONS

  • Cut Tofu into small cubes and finely slice fennel bulb

  • Place ghee, tofu, fennel and spices into a pan and gentle heat until soft

  • Grate the zest of one lemon and place in a separate pan with the rice, and 3x water. Bring to the boil and cook for 10 minutes.

  • Add coconut milk and lemon juice to the tofu and fennel.

  • And fresh coriander

Serve Tofu Tika masala with lemon Basmati rice, and Green salad and dressing as below…

BLUEBERRY VINAIGRETTE
8 tbsp Balsamic Vinegar
4 tbsp Honey
2 tbsp Lemon juice
1 Cup Olive oil
1 Cup Blueberries

Smash blueberries in a ziplock bag, whisk other ingredients together, then add blueberries and blend
