Warm Tofu Noodle Salad

INGREDIENTS
Serves 2

1/2 Pack rice noodles
1/2 Fennel bulb
15-20 Green beans
1/2 cup of tofu
1/4 Cup Chopped Coriander
1/2 tsp Cumin seeds
1/8 Cup Sliced Almonds
1 tsp fresh grated ginger
1 tbsp Ghee


DRESSING
1/8 tsp wasabi paste (you can use 1 tsp horseradish as an alternative)
6 tbsp Tamari sauce
2 tbsp Rice Vinegar or apple cider vinegar
1 Lime juiced
1 Garlic clove

Preparation

  • Place noodles under boiling water to soften and simmer for 3-5 minutes. Turn off the heat and leave to drain once the vegetables are ready.

  • Cut tofu into cubes, finely slice fennel and chop green beans in half, sauté in ghee with cumin seeds, garlic, ginger and sliced almonds for 3 mins (Until Fennel is soft and tofu a little golden)

  • Mix dressing ingredients together

  • Mix Vegetables and noodles together, drizzle dressing over just before serving.
