Sweet Potato & Spinach Omlette

INGREDIENTS
Serves 2
1 Sweet Potato
1 Onion
1/2 Packet of Spinach
6 Eggs
1/4 Can Coconut Milk
1 Garlic Clove
1/2 Green Chilli
2 tbsp Ghee
300g Green beans
150gm Sheep or Coconut Yogurt
1/4 Cucumber
1/2 Tsp salt

INSTRUCTIONS

  • Crack eggs in a bowl and whisk with Coconut milk

  • Peel and cut the sweet potato into large chunks, slice onions, finely chop the green chilli and place all into a pan with ghee and garlic, simmer for 6 mins with a lid on so that the ingredients sweat and increase in flavour.

  • Place green beans into a separate pan in boiling water and cook for 4 mins

  • Add spinach to the sweet potato and keep a lid on for another 2-3 minutes until it has wilted.

  • Add Eggs and cook on low heat for 5-7 minutes, until cooking the top underneath the grill for a further 5 -7 minutes, until risen and golden.

  • Cut the cucumber and mix with yoghurt

  • Serve with the omelette with green beans and cucumber and yoghurt raita


INSTRUCTIONS

  • Crack Eggs, blend with coconut milk, salt and pepper.

  • Cut sweet potato into cubes and slice Onion
