Sweet Potato & Spinach Omlette
INGREDIENTS
Serves 2
1 Sweet Potato
1 Onion
1/2 Packet of Spinach
6 Eggs
1/4 Can Coconut Milk
1 Garlic Clove
1/2 Green Chilli
2 tbsp Ghee
300g Green beans
150gm Sheep or Coconut Yogurt
1/4 Cucumber
1/2 Tsp salt
INSTRUCTIONS
Crack eggs in a bowl and whisk with Coconut milk
Peel and cut the sweet potato into large chunks, slice onions, finely chop the green chilli and place all into a pan with ghee and garlic, simmer for 6 mins with a lid on so that the ingredients sweat and increase in flavour.
Place green beans into a separate pan in boiling water and cook for 4 mins
Add spinach to the sweet potato and keep a lid on for another 2-3 minutes until it has wilted.
Add Eggs and cook on low heat for 5-7 minutes, until cooking the top underneath the grill for a further 5 -7 minutes, until risen and golden.
Cut the cucumber and mix with yoghurt
Serve with the omelette with green beans and cucumber and yoghurt raita

Crack Eggs, blend with coconut milk, salt and pepper.
Cut sweet potato into cubes and slice Onion
