Beetroot and Ginger Porridge

INGREDIENTS
Serves 2

1 Raw Beetroot
1 tsp Cinnamon
1/2 tsp Cumin seeds
2 tsp Grated Fresh Ginger
1 Cup Millet or Oat Flakes
2 Cups Plant Milk
1 Cup of Water
2 tbsp Coconut oil or Ghee


INSTRUCTIONS

  • Grate the beetroot and place in a pan with ghee and spices to panfry for 5-7 minutes

  • Add porridge flakes to the beetroot , with plant milk and water and bring to the boil and simmer for anouther 5-7 minutes until the flakes are cooked. Add additional milk/water if required.

  • Serve in a bowl with a drizzle of honey and a little more milk.
