Steamed Brocoli, Green Pea & Walnut Salad
INGREDIENTS
Serves 2
1 Broccoli head
1 cup Petit pois
1/2 Cup Chopped Walnuts
1 Aduki Beans (Canned or dried that have been soaked and cooked)
PARSLEY PESTO DRESSING
1 Pack of Parsley
1/4 Cup of toasted sunflower seeds
1 Lemon juiced
1 Garlic Clove
1/4 tsp salt
50ml Olive Oil
Water if needed
Blend all ingredients together into a smooth consistency.
INSTRUCTIONS
Steam Broccoli for 4 mins, then add peas for a further 3 mins. Then drain and place in a bowl.
Drain tinned aduki beans or green lentils and add to the broccoli and peas.
Add walnuts, a generous amount of pesto and mix all ingredients together to serve.
