Golden Porridge

INGREDIENTS
Serves 2
1/2 Cup Yellow Dahl
½ Cup White Basmati Rice
10 Organic Dried Apricots
1 tsp turmeric
5 Cardamom pods
1⁄4 tsp black pepper
5 cm grated fresh ginger
1.5 Cups plant or standard milk
1.5 cups water
1 tbsp Coconut Oil


The Night before: Wash and soak the dahl and basmati overnight

INSTRUCTIONS

  • The Morning: Place dried apricots in a pan with enough boiling water to cover plus half a centimetre extra and gently heat through for 5-7 mins.

  • Place ginger and spices in a pan with coconut oil and heat through for 2 minutes

  • Add soaked dahl and rice, then add plant milk & water and bring to the boil to simmer for 10 mins. You may need to add a little more water or milk for a sloppy consistency.

  • Serve with stewed apricots, Gomas seed mix and a little coconut yogurt on top.
